Propylene glycol is a compound that belongs to the group of alcohols. It is a clear, colorless and odorless liquid that is soluble in water and has a sweet taste. Propylene glycol is used as a food additive because it can help keep food moist, prevent spoilage, and enhance flavor. It is also used in cosmetics and medicine.
Food applications:
An emulsifier – to help mix ingredients that don’t normally mix well, such as oil and water
- An antioxidant – to prevent fats and oils from going rancid
- A preservative – to prevent bread and cakes from going stale
- Dough strengthener – to prevent bread from becoming crispy
- Flavor enhancer – to enhance or “carry” flavors
- A humectant – to keep food moist (which is why it’s often added to cakes and other baked goods)
- A stabilizer – to help prevent ice crystals from forming in ice cream
